 Sushi

The substantial and probably the most known part of the Japanese cuisine is sushi. With this word the most of us mean raw fish wrapped in rice and black sea-weed. But this is not the whole truth.
Japanese do divide sushi into a couple of groups, two basic groups are nigiri and maki. In both is rice the basis, these names metaphoric call the wise of preparation. Nigiri translated means grasp into the hand, and in the same way the rice is formed during the preparation of it. Such sushi is taken complete into fingers, from the side, where the fish is, it is light soaked into the soya-sauce and put onto the tongue. The principle is to eat at first nigiri from the lighter fishes, those are namely lighter digestible like the darker and red fishes.
Maki means, on the other side, wrapping, rolling. Sushi is, if this wise used, wrapped into sea-weeds using a bamboo-mat and afterwards it is equally sliced into rolls. It is served as the main dish or as the last but one dish of the Japanese menu.
